How does the ratio of water/biopolymers decide the state of the product?
Low concentration of water --> solid
Low concentration of biopolymer --> liquid
Which 2 factors determine the state of a product?
  • Temperature
  • Presence of plasticiser (often water, but can also be glucose and glycerol)
What happens at a high concentration of the dispersed phase?
The particles become jammed, this results in a strong increase in viscosity.
