Study Cards on concentrations, molecular, aggregation

A polysaccharide has a high molecular weight and therefore already phase separated at low concentrations. A protein has a smaller molecular weight. What can you do to also let the protein phase separate at low concentrations?
Adjusting the pH to the pI. This will induce protein aggregation. The protein will form 1 big molecule. The solubility decreases and phase separation already occurs at a lower concentration.
How can different structures be made of of a food product with the same composition?
  • Solidification --> stopping the demixing by bringing the product in the glassy state
  • Deformation --> application of shear
Mention 3 different processing techniques of dense biopolymer systems
  1. Extrusion
  2. Mixing
  3. Spinning
