A polysaccharide has a high molecular weight and therefore already phase separated at low concentrations. A protein has a smaller molecular weight. What can you do to also let the protein phase separate at low concentrations?
Adjusting the pH to the pI. This will induce protein aggregation. The protein will form 1 big molecule. The solubility decreases and phase separation already occurs at a lower concentration.
