What are the 2 ways to avoid transfer of components?
  1. Taking away the driving force for transfer
  2. Reduce the rate of transfer
What is done when the driving force for transfer is taken away?
Sometimes possible by adapting the formulation. Addition of glycerol can make the product softer (plasticiser) and reduces the water activity, moisture transfer is limited.
How can the transfer rate be reduced?
  1. Ensure that the product is at least partly in the glassy state (low T and low moisture content). Diffusion is very low in the glassy state. Can only be applied to certain products.
  2. Apply another edible coating that is especially designed to reduce the rate of transfer. Such coating are usually not glassy, because of the brittleness involved.
